Augustine nuns founded a hospital in Old Quebec in the 1600s. The Hotel-Dieu de Quebec National Historic Site of Canada is a religious and medical complex that was the first of its sort north of Mexico on the North American continent. For years, I had heard about the Canadian cuisine Poutine but had never eaten it.
